This creamy Cajun potato soup is hearty, comforting, and full of bold Southern flavor. With tender potatoes, smoky sausage, and a silky spiced broth, it’s the perfect one-pot meal for cozy nights.

Ingredients

  • 4 medium potatoes, peeled and diced
  • 12 ounces sausage (smoked or turkey), sliced
  • 2 celery stalks, chopped
  • 1 large yellow onion, diced
  • 3 garlic cloves, minced
  • 2 tablespoons Cajun seasoning
  • 4 cups chicken broth
  • 3/4 cup heavy cream
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Heat olive oil in a large soup pot over medium heat.
  2. Add sausage and cook until browned. Remove and set aside.
  3. Sauté onion and celery for 4–5 minutes until soft. Add garlic and Cajun seasoning, cook for 1 minute.
  4. Add potatoes and chicken broth. Stir and bring to a boil.
  5. Return sausage to the pot. Reduce heat and simmer 20–25 minutes until potatoes are tender.
  6. Stir in heavy cream, salt, and pepper. Simmer 5 more minutes.
  7. Taste and adjust seasoning. Serve hot, garnished with parsley if desired.

Notes

  • For a thicker soup, mash some of the potatoes before adding cream.
  • Add a squeeze of lemon juice to brighten flavors before serving.
  • Use coconut milk for a dairy-free version.
