Ingredients

Scale
  • 4 medium parsnips, peeled and chopped
  • 2 tart apples (like Granny Smith), peeled and chopped
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup heavy cream

Instructions

  1. Set a large pot over medium heat and add olive oil.
  2. Sauté onion and garlic until translucent and fragrant, about 5 minutes.
  3. Add chopped parsnips and apples. Stir to combine.
  4. Pour in vegetable broth, add salt, pepper, and nutmeg. Stir well.
  5. Bring to a boil, then reduce heat to low, cover, and simmer for 20–25 minutes.
  6. Once vegetables are tender, blend the soup until smooth using an immersion or standard blender.
  7. Stir in heavy cream and adjust seasoning if needed.
  8. Serve warm with a swirl of cream and garnish if desired.

Notes

  • Roasting parsnips before adding enhances depth of flavor.
  • Use coconut milk for a vegan-friendly version.
  • Add a splash of lemon juice before serving to brighten the soup.
  • Pairs beautifully with crusty bread or a crisp green salad.
