A hearty, comforting casserole that layers savory meatloaf with creamy mashed potatoes and melty cheddar cheese. Cowboy-style flavor in every bite.

Ingredients

  • Ground Beef: 1.5 pounds
  • Yellow Onion: 1 medium, diced
  • Garlic Cloves: 3, minced
  • Breadcrumbs: 1/2 cup
  • Eggs: 2 large
  • Worcestershire Sauce: 2 tablespoons
  • Ketchup: 1/4 cup
  • Paprika: 1 teaspoon
  • Salt: 1.5 teaspoons
  • Black Pepper: 1 teaspoon
  • Mashed Potatoes: 3 cups
  • Shredded Cheddar Cheese: 1.5 cups
  • Milk: 1/4 cup (optional, to soften mashed potatoes)

Instructions

  1. Preheat Your Equipment: Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Combine Ingredients: Sauté onion and garlic. In a large bowl, combine beef, onion mixture, breadcrumbs, eggs, ketchup, Worcestershire sauce, paprika, salt, and pepper. Mix well.
  3. Prepare Your Cooking Vessel: Spread the meat mixture into the baking dish, pressing it down evenly.
  4. Assemble the Dish: Spread mashed potatoes over meat. If too thick, mix with milk. Top with shredded cheddar cheese.
  5. Cook to Perfection: Bake uncovered for 30–35 minutes until fully cooked and cheese is bubbling.
  6. Finishing Touches: Broil for 2–3 minutes for a golden crust. Let rest for 10 minutes.
  7. Serve and Enjoy: Slice and serve warm. Garnish with parsley if desired.

Notes

  • Use leftover mashed potatoes to save time.
  • Add chopped veggies like bell peppers or corn to the meat for extra flavor.
  • Let the casserole rest before slicing for best results.
