A creamy and protein packed Cottage Cheese Pasta made with blended cottage cheese, garlic, olive oil, and Parmesan for a smooth, velvety sauce that coats every bite perfectly.

Ingredients

  • 250 grams pasta such as penne or fusilli
  • 1 cup cottage cheese, full fat
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon fresh basil or parsley, chopped
  • 1/4 cup reserved pasta water, as needed

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions.
  2. While the pasta cooks, blend the cottage cheese until completely smooth and creamy.
  3. Heat olive oil in a skillet over medium heat and sauté the minced garlic for about 1 minute until fragrant.
  4. Drain the pasta, reserving 1/4 cup of pasta water, and add the pasta to the skillet with garlic.
  5. Stir in the blended cottage cheese and grated Parmesan cheese.
  6. Add reserved pasta water gradually while stirring until the sauce becomes smooth and coats the pasta evenly.
  7. Season with salt and black pepper, sprinkle with fresh herbs, and serve immediately.

  • Blend the cottage cheese thoroughly to avoid lumps in the sauce.
  • Add pasta water slowly to control the creaminess.
  • Use freshly grated Parmesan for better flavor and melting.
  • Reheat gently with a splash of water or milk to restore creaminess.
