Soft and tender skillet bread made with cottage cheese for extra moisture, cooked until golden on the outside and fluffy inside.

Ingredients

  • 2 cups all purpose flour, about 250 grams
  • 1 cup cottage cheese, about 220 grams
  • 1 large egg
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 tablespoons olive oil

Instructions

  1. Heat a heavy skillet over medium heat and lightly grease it with a small amount of olive oil.
  2. In a mixing bowl, combine flour, baking powder, and salt.
  3. Stir in cottage cheese, egg, and olive oil until a soft dough forms. Mix gently until just combined.
  4. Lightly flour your surface if needed and shape the dough into a round about 8 inches wide.
  5. Place the dough round into the heated skillet and cook for 6 to 8 minutes on the first side until golden brown.
  6. Carefully flip and cook another 5 to 6 minutes until fully cooked through and golden.
  7. Remove from heat and let rest for 5 minutes before slicing and serving.

Notes

  • Use full fat cottage cheese for richer texture.
  • Do not overmix the dough to keep it tender.
  • Cook over medium heat to prevent burning the outside.
  • Let the bread rest before slicing to set the crumb.
