A soft and savory Corn Spinach Bread with a tender crumb, sweet corn bursts, and fresh spinach baked into every golden slice.

Ingredients

  • 1 1/2 cups all purpose flour
  • 1 cup cornmeal
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 tablespoons granulated sugar
  • 2 large eggs
  • 1 cup milk
  • 1/3 cup vegetable oil
  • 1 cup fresh spinach, finely chopped and squeezed dry
  • 1 cup sweet corn kernels

Instructions

  1. Preheat oven to 350°F and lightly grease an 8 inch round baking pan.
  2. In a bowl, whisk together flour, cornmeal, baking powder, salt, and sugar.
  3. In another bowl, whisk eggs, milk, and vegetable oil until smooth.
  4. Pour wet ingredients into dry ingredients and stir gently until just combined.
  5. Fold in chopped spinach and corn kernels evenly.
  6. Pour batter into prepared pan and spread evenly.
  7. Bake for 30 to 35 minutes until golden and a toothpick inserted in the center comes out clean.
  8. Cool for 10 minutes before slicing and serving.

Notes

  • Squeeze spinach thoroughly to remove excess moisture.
  • Do not overmix the batter to keep the bread tender.
  • Let the bread cool slightly before slicing for clean cuts.
