Crispy on the outside and fluffy on the inside, these golden corn fritters are bursting with sweet corn, green onions, and a touch of spice. Perfect as a snack, side, or light meal.

Ingredients

  • 3/4 cup all-purpose flour
  • 1 1/2 cups corn kernels (fresh or frozen)
  • 1 large egg
  • 1/4 cup milk
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped green onions
  • 1/3 cup grated cheese (optional)
  • Vegetable oil for frying

Instructions

  1. Set a non-stick skillet over medium heat and let it preheat.
  2. In a bowl, whisk flour, baking powder, salt, and pepper. Stir in corn, green onions, and cheese if using.
  3. Beat the egg and milk together, then mix into the dry ingredients until just combined.
  4. Heat 2 tablespoons of oil in the skillet. Once hot, drop spoonfuls of batter into the pan and flatten slightly.
  5. Cook each fritter for 2–3 minutes per side until golden brown and crispy.
  6. Drain on paper towels and sprinkle with a pinch of salt while hot.
  7. Serve warm with your favorite toppings or dipping sauces.

Notes

  • For extra crunch, add 1 tablespoon of cornmeal to the batter.
  • Let the batter rest 5–10 minutes before frying for better texture.
  • Use a non-stick skillet to avoid sticking and ensure a golden crust.
