Golden and crispy on the outside, soft and cheesy on the inside, these Corn Cheese Patties are the perfect savory snack or appetizer. Sweet corn kernels and melty cheese come together in a quick pan-fried bite that is comforting, flavorful, and totally irresistible.

Ingredients

  • 2 cups sweet corn kernels, drained if using canned
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup cheddar cheese, shredded
  • 1/2 cup all purpose flour
  • 2 large eggs
  • 2 tablespoons green onions, finely chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 tablespoons oil for frying

Instructions

  1. Preheat a nonstick skillet over medium heat and allow it to warm gently.
  2. In a large mixing bowl, combine sweet corn, mozzarella cheese, cheddar cheese, flour, eggs, green onions, salt, and black pepper. Mix until evenly incorporated and slightly sticky.
  3. Add the oil to the warm skillet and heat until shimmering but not smoking.
  4. Scoop about 2 tablespoons of the mixture and shape into small flat patties using your hands.
  5. Place the patties in the skillet and cook for 3 to 4 minutes on each side, until golden brown and crisp.
  6. Remove from the skillet and transfer to a paper towel lined plate to absorb excess oil.
  7. Serve warm while the cheese is soft and melty inside.

Notes

  • Drain the corn well to prevent the mixture from becoming too wet.
  • If the mixture feels too soft, chill it for 10 minutes before shaping.
  • Cook on medium heat to ensure the patties brown evenly without burning.
