Creamy baked corn and cheese cups that are warm, comforting, and perfect as a quick snack or side dish.

Ingredients

  • 1 1/2 cups sweet corn kernels
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup heavy cream
  • 1 tablespoon butter, melted
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 375°F.
  2. In a mixing bowl, combine sweet corn, mozzarella cheese, cheddar cheese, heavy cream, melted butter, salt, and black pepper.
  3. Mix gently until all ingredients are evenly combined.
  4. Lightly grease oven-safe cups or ramekins.
  5. Spoon the mixture evenly into each cup.
  6. Place the cups on a baking tray and bake for 18 minutes until bubbly.
  7. Switch the oven to broil and cook for an additional 2 minutes until the tops are lightly golden.
  8. Remove from the oven, let rest briefly, then serve warm.
