Golden, buttery corn bites that are crisp on the outside and tender on the inside, brushed with melted butter for a glossy, irresistible finish. Perfect as a snack, appetizer, or comforting side dish.

Ingredients

  • 1 cup sweet corn kernels, fresh or canned and drained
  • 1 cup all purpose flour
  • 1 teaspoon baking powder
  • 1 tablespoon granulated sugar
  • 1 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 4 tablespoons unsalted butter, melted
  • 2 tablespoons unsalted butter, melted for brushing
  • 1 tablespoon chopped fresh parsley, optional

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit or heat a nonstick skillet over medium heat.
  2. In a large bowl, whisk together the flour, baking powder, sugar, and salt.
  3. In a separate bowl, mix the milk, egg, and 4 tablespoons melted butter until smooth.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined. Fold in the corn kernels and parsley.
  5. Lightly grease a skillet or mini muffin pan with butter.
  6. Spoon small portions of batter into the skillet or muffin cavities, filling each about three quarters full.
  7. Cook in a skillet for 3 to 4 minutes per side until golden brown, or bake for 12 to 15 minutes until lightly golden and set.
  8. Brush immediately with the remaining 2 tablespoons melted butter while still warm.
  9. Let cool slightly, then serve warm and enjoy.

Notes

  • Do not overmix the batter to keep the bites light and tender.
  • Rotate the pan halfway through baking for even color.
  • Reheat leftovers in a 300 degree Fahrenheit oven for 5 to 7 minutes.
