These Copycat Crumbl Birthday Cake Cookies are thick, soft, and swirled with creamy vanilla frosting and colorful sprinkles—just like the real deal, but homemade and even more delicious.

  • 2 3/4 cups all-purpose flour
  • 1 tablespoon cornstarch
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1/3 cup rainbow sprinkles
  • 2 cups powdered sugar (for frosting)
  • 23 tablespoons milk (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk flour, cornstarch, baking powder, baking soda, and salt.
  3. In a large bowl, cream butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add eggs and vanilla, mix until combined.
  5. Gradually add dry ingredients to wet mixture. Stir in rainbow sprinkles.
  6. Scoop large balls of dough (about 3 tablespoons) and place on baking sheets.
  7. Bake for 10–12 minutes until edges are set. Cool completely.
  8. For frosting: beat butter and powdered sugar until fluffy. Add milk until desired consistency. Pipe onto cooled cookies and top with sprinkles.

Notes

  • Use jimmies-style sprinkles to prevent bleeding.
  • Don’t overbake—cookies should look slightly underdone in the center.
  • Chill dough briefly if it’s too soft to scoop.
  • Store in an airtight container at room temp for up to 3 days or refrigerate for longer freshness.
