Cookie Dough Ice Cream Bites

These Cookie Dough Ice Cream Bites combine edible cookie dough with your favorite ice cream, dipped in a chocolate shell for the perfect frozen treat. A sweet and nostalgic dessert you can make at home—no baking required!

Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 2 tbsp granulated sugar
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour (heat-treated)
  • 2 tbsp milk
  • 1/2 cup mini chocolate chips
  • 1 pint vanilla ice cream (or flavor of choice)
  • 1 1/2 cups semi-sweet chocolate chips (for dipping)
  • 1 tbsp coconut oil (optional, for melting chocolate)

Instructions

  1. In a mixing bowl, cream together butter and sugars until light and fluffy. Stir in vanilla and milk.
  2. Add heat-treated flour and mix until combined. Fold in mini chocolate chips.
  3. Roll the cookie dough into 1-inch balls. Flatten each one slightly and press a small scoop of ice cream in the center. Cover with more cookie dough and roll into a ball to seal the ice cream inside.
  4. Place on a baking sheet and freeze for 1–2 hours, until firm.
  5. Melt chocolate chips with coconut oil until smooth. Dip each frozen bite into melted chocolate and place back on the baking sheet.
  6. Freeze until chocolate is set. Store in an airtight container in the freezer.

Notes

  • Make sure to use heat-treated flour to make it safe for raw consumption.
  • You can use any ice cream flavor you like—strawberry, chocolate, mint chip, etc.
  • Add sprinkles or crushed nuts before the chocolate sets for extra fun.
