- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 2 tbsp granulated sugar
- 1 tsp vanilla extract
- 1 cup all-purpose flour (heat-treated)
- 2 tbsp milk
- 1/2 cup mini chocolate chips
- 1 pint vanilla ice cream (or flavor of choice)
- 1 1/2 cups semi-sweet chocolate chips (for dipping)
- 1 tbsp coconut oil (optional, for melting chocolate)
- In a mixing bowl, cream together butter and sugars until light and fluffy. Stir in vanilla and milk.
- Add heat-treated flour and mix until combined. Fold in mini chocolate chips.
- Roll the cookie dough into 1-inch balls. Flatten each one slightly and press a small scoop of ice cream in the center. Cover with more cookie dough and roll into a ball to seal the ice cream inside.
- Place on a baking sheet and freeze for 1–2 hours, until firm.
- Melt chocolate chips with coconut oil until smooth. Dip each frozen bite into melted chocolate and place back on the baking sheet.
- Freeze until chocolate is set. Store in an airtight container in the freezer.
Notes
- Make sure to use heat-treated flour to make it safe for raw consumption.
- You can use any ice cream flavor you like—strawberry, chocolate, mint chip, etc.
- Add sprinkles or crushed nuts before the chocolate sets for extra fun.
