A light and refreshing drink made by gently toasting rice, simmering it in water, then chilling the strained liquid for a soothing, nutty flavored beverage.

Ingredients

  • 1/2 cup uncooked white rice
  • 4 cups water
  • 1/8 teaspoon sea salt (optional)
  • 1 to 2 teaspoons granulated sugar (optional)

Instructions

  1. Heat a dry medium skillet over medium heat for about 1 minute.
  2. Add the uncooked white rice and toast, stirring frequently, until golden and fragrant, about 5 to 7 minutes.
  3. Transfer the toasted rice to a medium saucepan.
  4. Add the water and bring to a gentle boil.
  5. Reduce heat and simmer uncovered for 15 minutes.
  6. Remove from heat and strain the liquid into a heatproof container.
  7. Stir in sea salt and sugar if using.
  8. Allow to cool, then refrigerate for at least 2 hours before serving chilled.

Notes

  • Toast the rice slowly to avoid bitterness.
  • Adjust sweetness after chilling for best flavor balance.
  • Stir before serving as natural settling may occur.
