A light, refreshing homemade drink made by simmering pearl barley and finishing it with fresh lime juice. Cooling, gentle, and perfect for warm days.

Ingredients

  • Pearl barley – 1/4 cup
  • Water – 6 cups
  • Lime juice – 1 tablespoon
  • Salt – 1/8 teaspoon
  • Honey (optional) – 1 to 2 teaspoons

Instructions

  1. Rinse the pearl barley thoroughly under running water.
  2. Add the barley and water to a saucepan and place it on medium heat.
  3. Bring to a gentle simmer and cook uncovered for about 25 minutes, stirring occasionally.
  4. Remove from heat once the liquid turns lightly cloudy.
  5. Strain the liquid into a pitcher, discarding or saving the cooked barley.
  6. Stir in lime juice, salt, and honey if using.
  7. Chill completely before serving cold.

Notes

  • Always stir before serving as natural settling may occur.
  • Adjust lime juice and sweetness after chilling.
  • Store refrigerated for up to 3 days.
