Instructions

  1. Preheat oven to 350°F. Grease a 9-inch round cake pan and line the bottom with parchment paper.
  2. In one bowl, whisk together flour, cinnamon, baking powder, baking soda, and salt.
  3. In another bowl, whisk together olive oil, granulated sugar, brown sugar, and eggs until smooth.
  4. Combine the dry and wet mixtures. Stir gently just until combined. Fold in the chopped apples and walnuts.
  5. Pour the batter into the prepared cake pan and smooth the top.
  6. Bake for 40–45 minutes or until a toothpick inserted in the center comes out clean.
