These Chocolate Dipped Strawberry Cookies are buttery, fruity, and elegant, made with freeze-dried strawberries baked into soft cookies and finished with a glossy chocolate dip. Perfect for gifting or special occasions.

  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup freeze-dried strawberries, finely crushed
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 8 ounces dark or semi-sweet chocolate, melted
  • Extra crushed freeze-dried strawberries for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream butter and sugar together until light and fluffy. Beat in egg and vanilla extract.
  3. In a separate bowl, whisk flour, crushed strawberries, baking powder, and salt.
  4. Gradually add dry ingredients to wet ingredients until combined.
  5. Scoop tablespoon-sized portions onto baking sheet, flatten slightly, and bake for 10–12 minutes until edges are set.
  6. Cool cookies completely. Dip half of each cookie into melted chocolate and place on parchment paper to set.
  7. Sprinkle with extra crushed strawberries if desired.
  8. Let chocolate harden fully before serving or storing.

Notes

  • Do not use fresh strawberries—they add too much moisture.
  • If dough feels sticky, chill for 30 minutes before shaping.
  • Let dipped cookies set at room temperature for a glossy finish.
  • Store in an airtight container for up to 5 days or freeze up to 2 months.
