Ingredients

  • Salsa Verde: 1 cup
  • Monterey Jack Cheese: 1 cup, shredded
  • Mozzarella Cheese: 1 cup, shredded
  • Flour Tortillas: 4 large (8-inch)
  • Olive Oil or Butter: 1 tablespoon
  • Fresh Cilantro: 1/4 cup, chopped
  • Lime Wedges: for serving
  • Optional Toppings: Sour cream, avocado slices, extra salsa verde

Instructions

  1. Prepare the filling: In a bowl, toss shredded chicken with salsa verde until evenly coated. Stir in chopped cilantro.
  2. Assemble the quesadillas: Lay out tortillas and sprinkle half of the cheese on one side. Add the chicken mixture, then top with remaining cheese. Fold in half.
