A classic from upstate New York, Chicken Spiedies are juicy marinated chicken cubes grilled to perfection and served on skewers or in soft Italian bread. Packed with garlic, lemon, and herbs, they’re a cookout favorite that’s easy to love.

Ingredients

  • Chicken Breasts or Thighs: 2 pounds, cut into 1-inch cubes
  • Olive Oil: ½ cup
  • Lemon Juice: ¼ cup, freshly squeezed
  • Garlic: 4 cloves, minced
  • Fresh Parsley: 3 tablespoons, chopped
  • Dried Oregano: 2 teaspoons
  • Dried Basil: 1 teaspoon
  • Salt: 1 teaspoon
  • Black Pepper: ½ teaspoon, freshly ground
  • Red Pepper Flakes: ¼ teaspoon (optional)

Instructions

  1. Preheat Your Equipment: Preheat grill to medium-high heat or heat a grill pan indoors.
  2. Combine Ingredients: In a bowl, whisk olive oil, lemon juice, garlic, parsley, oregano, basil, salt, pepper, and red pepper flakes. Add chicken and mix well.
  3. Prepare Your Cooking Vessel: Cover and refrigerate for at least 4 hours or overnight to marinate.
  4. Assemble the Dish: Thread marinated chicken onto skewers, leaving space between pieces.
  5. Cook to Perfection: Grill skewers 8–10 minutes, turning occasionally, until chicken is cooked through with light char.
  6. Finishing Touches: Remove from grill and let rest for 2 minutes.
  7. Serve and Enjoy: Serve hot on skewers or in Italian bread for the authentic spiedie experience.

Notes

  • Tip: Marinate overnight for maximum flavor and tenderness.
  • Note: Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
  • Idea: Reserve some marinade (before adding chicken) to drizzle over cooked spiedies.
