Golden, crispy tortillas filled with seasoned chicken and gooey melted cheese, cooked until perfectly crisp on the outside and warm and comforting on the inside. A fast, satisfying meal that works for lunch, dinner, or sharing.

Ingredients

  • 2 large flour tortillas
  • 1 cup cooked chicken, finely shredded
  • 1 cup shredded mozzarella and cheddar cheese blend
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 teaspoon paprika
  • 0.25 teaspoon garlic powder

Instructions

  1. Heat a non-stick skillet over medium heat until warm.
  2. In a bowl, mix the shredded chicken with salt, black pepper, paprika, and garlic powder until evenly coated.
  3. Lightly brush the skillet with olive oil.
  4. Place one tortilla in the skillet and sprinkle half of the cheese evenly over it.
  5. Add the seasoned chicken in an even layer, then top with the remaining cheese.
  6. Cover with the second tortilla and cook for 3 to 4 minutes until the bottom is golden.
  7. Carefully flip and cook the other side for another 3 to 4 minutes until crisp and the cheese is fully melted.
  8. Remove from heat, rest for one minute, slice into wedges, and serve warm.

Notes

  • Cook over medium heat to avoid burning the tortilla.
  • Press gently with a spatula while cooking to help the filling bind.
  • Reheat leftovers in a skillet for best texture.
