  • 1.5 pounds boneless, skinless chicken thighs
  • 3 cups pumpkin, peeled and cubed
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, sliced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Season the chicken thighs with salt and black pepper.
  3. Brown the chicken on both sides for about 5 to 6 minutes, then remove from the pot and set aside.
  4. In the same pot, sauté the diced onion, minced garlic, carrots, and celery until softened and fragrant.
  5. Return the chicken to the pot and add the cubed pumpkin.
  6. Pour in the chicken broth, then stir in the dried thyme and paprika.
  7. Bring to a gentle boil, then reduce heat and simmer for 30 to 35 minutes until the chicken is cooked through and the pumpkin is tender.
  8. Taste and adjust seasoning if needed.
  9. Serve hot and enjoy.
