A comforting and flavorful chicken pea stew made with tender chicken thighs, sweet green peas, warm spices, and a light savory broth. Perfect for a cozy family dinner and even better the next day.

  • 1.5 pounds boneless, skinless chicken thighs, cut into bite sized pieces
  • 2 cups green peas, fresh or frozen
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 3 cups low sodium chicken broth
  • 1 tablespoon tomato paste
  • 1 teaspoon paprika
  • 0.5 teaspoon ground cumin
  • 1 small red chili, thinly sliced
  • 1 teaspoon salt, or to taste
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Place a large pot over medium heat and allow it to warm for about 1 minute.
  2. In a bowl, season the chicken pieces with salt, black pepper, paprika, and cumin. Toss to coat evenly.
  3. Add olive oil to the pot. Add chopped onion and sauté until soft and lightly golden. Stir in minced garlic and cook for 30 seconds until fragrant.
  4. Add the seasoned chicken to the pot and cook until lightly browned on the outside. Stir in tomato paste and cook for 1 minute. Pour in chicken broth and add sliced red chili.
  5. Bring to a gentle simmer. Cover and cook for 20 minutes, stirring occasionally.
  6. Add green peas and cook for an additional 5 minutes until tender but still bright.
  7. Taste and adjust salt if needed. Sprinkle chopped parsley over the top before serving.

Notes

  • For a thicker broth, simmer uncovered for a few extra minutes.
  • Add a squeeze of fresh lemon juice before serving for brightness.
  • Do not overcook the peas to maintain their color and texture.
  • This stew tastes even better the next day after the flavors deepen.
