  • 1 lb chicken thighs, cut into bite sized pieces
  • 1 cup brown lentils, rinsed
  • 2 medium carrots, sliced
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup plain yogurt, for serving
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and carrots, and cook until softened and fragrant.
  3. Stir in garlic and tomato paste, cooking until slightly darkened.
  4. Add chicken pieces and stir to coat with the mixture.
  5. Add lentils, vegetable broth, cumin, salt, and black pepper.
  6. Bring to a gentle simmer, cover, and cook for 45 minutes until lentils are tender.
  7. Taste and adjust seasoning if needed.
  8. Serve hot topped with yogurt and fresh parsley.

Notes

  • Rinse lentils well to keep the broth clean.
  • Simmer gently to keep the chicken tender.
  • Add extra broth if the stew thickens too much.
