Ingredients

Scale
  • lbs boneless skinless chicken breasts, cooked and cubed
  • 4 cups broccoli florets, lightly steamed
  • 23 tablespoons butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 23 tablespoons all-purpose flour
  • 1½ cups chicken broth
  • ½1 cup heavy cream or milk
  • 1½ cups shredded sharp cheddar cheese
  • ½ cup grated Parmesan cheese
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • Optional: breadcrumbs or panko for topping

Instructions

  1. Preheat oven to 375°F. Grease a 9×13 baking dish.
  2. Cook chicken until done and cut into bite-sized pieces. Lightly steam broccoli and set aside.
  3. In a skillet, melt butter and sauté onion until soft. Add garlic and cook briefly.
  4. Stir in flour to form a roux. Slowly whisk in chicken broth and cream. Simmer until thickened.
  5. Stir in cheddar cheese until melted. Add lemon juice, salt, and pepper to taste.
  6. Layer broccoli and chicken in baking dish. Pour cheese sauce over top.
  7. Sprinkle with Parmesan and breadcrumbs if using.
  8. Bake uncovered for 20–25 minutes until bubbly and golden. Let rest before serving.

Notes

  • Do not overcook broccoli before baking—it should stay crisp-tender.
  • Use rotisserie chicken for a quick shortcut.
  • Broil for 1–2 minutes for a golden topping.
  • Let casserole rest 5–10 minutes before serving for better structure.
