  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 medium carrots, sliced
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 pound boneless skinless chicken breast, cooked and shredded
  • 3/4 cup pearl barley, rinsed
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat a large soup pot over medium heat.
  2. Add olive oil, then sauté onion, carrots, and celery for about 5 minutes until softened. Stir in garlic and cook for 1 minute.
  3. Pour in the chicken broth and stir to combine.
  4. Add shredded chicken, pearl barley, dried thyme, salt, and black pepper. Stir well.
  5. Bring to a gentle boil, then reduce heat and simmer uncovered for 35 minutes until the barley is tender.
  6. Stir in fresh parsley and adjust seasoning if needed.
  7. Ladle into bowls and serve warm.

  • Rinse the barley before cooking to remove excess starch.
