Golden, crispy rice balls with a soft, cheesy center that make a comforting snack or side dish.

Ingredients

  • 2 cups cooked white rice
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 1 large egg
  • 1/4 cup all purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped chives
  • 2 tablespoons olive oil

Instructions

  1. Heat a nonstick skillet over medium heat and add olive oil.
  2. Mix rice, mozzarella, parmesan, egg, flour, salt, pepper, and chives in a bowl.
  3. Shape the mixture into small balls.
  4. Place rice balls in the skillet and cook, turning gently, until golden on all sides.
  5. Remove from heat and rest briefly before serving.

Notes

  • Use cooled rice for best shaping.
  • Do not overcrowd the pan while cooking.
