This Cheesy Garlic Parmesan Cauliflower is the ultimate comfort side dish—tender roasted florets smothered in a creamy garlic sauce and topped with golden, bubbly cheese. A low-carb favorite packed with flavor and texture.

Ingredients

  • Cauliflower Florets: 1 large head (about 6 cups), cut into bite-sized pieces
  • Olive Oil: 2 tablespoons
  • Butter: 2 tablespoons
  • Garlic Cloves: 4, minced
  • Heavy Cream: 1/2 cup
  • Parmesan Cheese: 1 cup, freshly grated
  • Mozzarella Cheese: 1/2 cup, shredded
  • Salt: 1/2 teaspoon
  • Black Pepper: 1/4 teaspoon
  • Parsley: 1 tablespoon, chopped

Instructions

  1. Preheat Your Equipment: Set your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Combine Ingredients: Toss the cauliflower florets with olive oil, salt, and pepper. Spread evenly on the baking sheet.
  3. Prepare Your Cooking Vessel: While cauliflower roasts, melt butter in a saucepan over medium heat. Add garlic and sauté until fragrant, about 1 minute. Stir in the cream and bring to a gentle simmer.
  4. Assemble the Dish: Transfer roasted cauliflower to an oven-safe skillet or casserole dish. Pour the garlic cream sauce over. Sprinkle with parmesan and mozzarella.
  5. Cook to Perfection: Bake at 375°F (190°C) for 10–15 minutes until bubbly. For extra crisp on top, broil for 2–3 minutes.
  6. Finishing Touches: Sprinkle chopped parsley over the hot, cheesy surface for color and freshness.
  7. Serve and Enjoy: Dish it up warm and enjoy the cheesy, garlicky goodness.

Notes

  • Roast cauliflower to enhance its natural sweetness.
  • Use fresh garlic and freshly grated cheese for best results.
