A creamy and comforting baked casserole made with tender chicken, fluffy rice, and a golden layer of melted cheddar cheese. Perfect for busy weeknights, family dinners, and make-ahead meals.

Ingredients

Scale
  • 3 cups cooked chicken, shredded or diced
  • 1 cup uncooked long grain white rice
  • 2 cups chicken broth
  • 1 can (10.5 ounces) cream of chicken soup
  • 1 cup milk
  • 2 cups shredded cheddar cheese, divided
  • 1 small onion, finely diced
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup frozen peas

Instructions

  1. Preheat Your Equipment: Preheat oven to 375 degrees Fahrenheit.
  2. Combine Ingredients: In a large mixing bowl, stir together uncooked rice, chicken broth, cream of chicken soup, milk, garlic powder, salt, black pepper, diced onion, frozen peas, and 1 cup shredded cheddar cheese until well combined.
  3. Prepare Your Cooking Vessel: Lightly grease a 9 by 13 inch baking dish.
  4. Assemble the Dish: Pour mixture into the prepared baking dish and spread evenly. Sprinkle remaining 1 cup shredded cheddar cheese over the top.
  5. Cook to Perfection: Cover tightly with foil and bake for 40 minutes. Remove foil and bake an additional 20 minutes, or until rice is tender and cheese is golden and bubbling.
  6. Finishing Touches: Let rest for 5 to 10 minutes before serving.
  7. Serve and Enjoy: Scoop onto plates and serve warm.

Notes

  • Use freshly shredded cheese for better melting.
  • If top browns too quickly, loosely cover with foil.
  • Let the casserole rest before serving so it sets properly.
