  • 1 cup long-grain white rice (uncooked)
  • 4 cups broccoli florets (fresh or frozen)
  • 2 cups shredded cheddar cheese
  • 4 ounces cream cheese (softened)
  • 1 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 tablespoons butter
  • 1/2 cup breadcrumbs (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch casserole dish.
  2. Cook rice according to package instructions and steam or blanch broccoli until crisp-tender.
  3. In a large mixing bowl, combine cooked rice, broccoli, cheddar cheese, cream cheese, milk, butter, garlic powder, onion powder, salt, and pepper.
  4. Transfer the mixture to the greased casserole dish and smooth the top with a spatula.
  5. If desired, sprinkle breadcrumbs over the top for a crunchy topping.
  6. Bake uncovered for 25–30 minutes, or until bubbly and golden on top.
  7. Let it rest for 5–10 minutes before serving.
