Crispy golden cheese spring rolls filled with melty mozzarella and cheddar. A perfect quick snack or party appetizer with loads of flavor and crunch.
- 10 spring roll wrappers
- 1 cup shredded mozzarella cheese
- 1/2 cup grated cheddar cheese
- 2 tbsp cornflour mixed with 2 tbsp water (for sealing)
- Salt and pepper to taste
- 1/2 tsp chili flakes (optional)
- 1 tbsp chopped fresh coriander or parsley (optional)
- Vegetable oil for deep frying
- Heat oil in a deep frying pan to 350°F (175°C).
- In a bowl, mix mozzarella, cheddar, salt, pepper, chili flakes, and herbs if using.
- Lay out spring roll wrappers on a clean surface and prepare cornflour slurry for sealing.
- Place 2 tablespoons of cheese mixture on one end of a wrapper. Fold in sides, roll tightly, and seal with cornflour paste.
- Fry the rolls in batches, turning until golden and crispy, about 3–4 minutes.
- Drain on paper towels to remove excess oil.
- Serve hot with your favorite dip.
Notes
- Use a mix of cheeses for depth of flavor.
- Seal edges tightly to prevent cheese from leaking.
- Can be made ahead and frozen raw.
- Air fryer friendly: cook at 375°F for 8–10 minutes.
