Crispy golden cheese spring rolls filled with melty mozzarella and cheddar. A perfect quick snack or party appetizer with loads of flavor and crunch.

Ingredients

  • 10 spring roll wrappers
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated cheddar cheese
  • 2 tbsp cornflour mixed with 2 tbsp water (for sealing)
  • Salt and pepper to taste
  • 1/2 tsp chili flakes (optional)
  • 1 tbsp chopped fresh coriander or parsley (optional)
  • Vegetable oil for deep frying

Instructions

  1. Heat oil in a deep frying pan to 350°F (175°C).
  2. In a bowl, mix mozzarella, cheddar, salt, pepper, chili flakes, and herbs if using.
  3. Lay out spring roll wrappers on a clean surface and prepare cornflour slurry for sealing.
  4. Place 2 tablespoons of cheese mixture on one end of a wrapper. Fold in sides, roll tightly, and seal with cornflour paste.
  5. Fry the rolls in batches, turning until golden and crispy, about 3–4 minutes.
  6. Drain on paper towels to remove excess oil.
  7. Serve hot with your favorite dip.

Notes

  • Use a mix of cheeses for depth of flavor.
  • Seal edges tightly to prevent cheese from leaking.
  • Can be made ahead and frozen raw.
  • Air fryer friendly: cook at 375°F for 8–10 minutes.
