Golden, crispy toasties filled with tender spinach and a rich blend of melted mozzarella and cheddar, finished with fresh green onions. A quick and comforting vegetarian meal that delivers crunch, creaminess, and bold flavor in every bite.

  • 4 slices sandwich bread
  • 2 cups fresh spinach leaves, loosely packed
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 2 tablespoons unsalted butter, softened
  • 1 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons sliced green onions

Instructions

  1. Preheat a nonstick skillet over medium heat.
  2. In a bowl, toss the fresh spinach leaves with garlic powder, salt, and black pepper until evenly coated.
  3. Spread softened butter evenly on one side of each slice of sandwich bread.
  4. Place one slice of bread butter side down in the skillet. Layer with shredded mozzarella, shredded cheddar, and the seasoned spinach. Top with another slice of bread, butter side up.
  5. Cook for 3 to 4 minutes on one side until golden brown, then carefully flip and cook another 3 to 4 minutes until the second side is golden and the cheese is fully melted.
  6. Remove from the skillet and let rest for 1 minute.
  7. Sprinkle sliced green onions on top, slice in half, and serve warm.

Notes

  • Use freshly shredded cheese for the best melt and texture.
  • Cook on medium heat to avoid burning the bread before the cheese melts.
  • Do not overload with spinach to prevent sogginess.
