Thin, crispy homemade rice crackers baked until golden, finished with savory cheese and fragrant dried herbs. Perfect for snacking, dipping, or serving alongside soups and spreads.

Ingredients

  • Rice flour – 1 cup
  • Grated cheddar cheese – 1/2 cup
  • Olive oil – 2 tablespoons
  • Water – 1/3 cup
  • Dried mixed herbs – 1 teaspoon
  • Salt – 1/2 teaspoon
  • Garlic powder – 1/4 teaspoon

Instructions

  1. Preheat the oven to 180°C and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine rice flour, salt, garlic powder, dried herbs, and grated cheese.
  3. Add olive oil and gradually mix in water until a smooth, workable dough forms.
  4. Place the dough between two sheets of parchment paper and roll it very thin.
  5. Cut the dough into small squares and transfer them to the prepared baking sheet.
  6. Bake for 18 to 22 minutes, until the crackers are golden and crisp.
  7. Remove from the oven and let cool completely before serving.

Notes

  • Roll the dough as thin as possible for maximum crispness.
  • Allow crackers to cool fully, they continue to crisp as they rest.
  • Store in an airtight container to maintain crunch.
