A comforting classic featuring melted cheddar and mozzarella cheese with sweet onions, tucked between golden, buttery slices of toasted bread — simple, satisfying, and irresistibly gooey.

Ingredients

  • Cheddar cheese: 1 cup, grated – Sharp, rich, and the sandwich’s main flavor.
  • Mozzarella or gouda cheese: 1/2 cup, grated – Melts beautifully for gooeyness.
  • Onion (white or red): 1 small, thinly sliced – Sweet and savory, adds crunch and bite.
  • Bread slices: 4 (thick cut) – Your favorite: sourdough, whole grain, white.
  • Butter: 2 tablespoons – For that golden, crisp outer crust.
  • Mayonnaise or mustard: 1 tablespoon (optional) – Adds creaminess or zing, depending on preference.
  • Salt and pepper: To taste – Enhances every bite.

Instructions

  1. Preheat Your Equipment: Warm a skillet over medium heat or plug in your sandwich press.
  2. Combine Ingredients: In a bowl, mix grated cheddar, mozzarella, sliced onions, and a dash of pepper. Add mayo or mustard if using for extra richness.
  3. Prepare Your Cooking Vessel: Butter one side of each bread slice. Place two slices butter-side down on a clean surface.
  4. Assemble the Dish: Pile the cheese-onion mixture evenly on the unbuttered side of the bread. Top with the other slices, buttered side facing up.
  5. Cook to Perfection: Place the sandwich in the skillet or press. Cook 3–4 minutes per side until bread is golden and cheese is melted.
  6. Finishing Touches: Remove from heat, let rest 1 minute, then cut diagonally for that classic café feel.
  7. Serve and Enjoy: Serve hot with crisps, pickles, or a side salad for a full lunch.

Notes

  • Grate cheese fresh for better melt.
  • Butter the outside of bread for golden crispness.
  • Cook on medium heat to avoid burning while cheese melts.
  • Sauté onions for a sweeter, milder flavor if preferred.
