  • 1 unbaked 9 inch pie crust
  • 3 large yellow onions, thinly sliced, about 4 cups
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 3 large eggs
  • 1 cup heavy cream
  • 1 1/2 cups shredded Gruyere cheese, about 150 grams
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon fresh thyme, chopped, optional

Instructions

  1. Preheat oven to 375 degrees Fahrenheit and position rack in the center.
  2. In a mixing bowl, whisk together eggs, heavy cream, salt, black pepper, and fresh thyme until smooth.
  3. Heat olive oil and butter in a large skillet over medium low heat. Add sliced onions and cook for 25 to 30 minutes, stirring occasionally, until deeply golden and soft.
  4. Lightly pre bake the pie crust for 10 minutes. Spread caramelized onions evenly over the crust. Sprinkle shredded Gruyere on top, then pour the egg and cream mixture over everything.
  5. Bake for 30 to 35 minutes, until the center is set and the top is lightly golden.
  6. Let the tart cool for at least 10 minutes before slicing and serving.
