Soft, golden crepes filled with warm caramelized bananas and finished with a rich chocolate drizzle. This sweet and elegant dish is perfect for breakfast, brunch, or dessert and comes together with simple pantry ingredients.

  • 1 cup all purpose flour
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon salt
  • 1 1/2 cups milk
  • 2 large eggs
  • 4 tablespoons unsalted butter, divided
  • 1 teaspoon vanilla extract
  • 3 medium ripe bananas, sliced
  • 1/3 cup brown sugar
  • 1/4 cup chocolate sauce

Instructions

  1. In a mixing bowl, whisk together the flour, granulated sugar, and salt. Add the milk, eggs, 2 tablespoons melted butter, and vanilla extract. Whisk until smooth and let the batter rest for 20 minutes.
  2. Heat a nonstick skillet over medium heat and lightly butter it. Pour about 1/4 cup of batter into the center and swirl quickly to spread into a thin layer.
  3. Cook each crepe for 1 to 2 minutes per side until lightly golden. Transfer to a plate and repeat with remaining batter, stacking the crepes and covering to keep warm.
  4. In a small saucepan over medium heat, melt the remaining 2 tablespoons butter. Stir in the brown sugar until dissolved and bubbling gently.
  5. Add the sliced bananas and cook for 3 to 4 minutes until tender and coated in caramel.
  6. Spoon the warm caramelized bananas onto each crepe and fold gently.
  7. Drizzle with chocolate sauce and serve immediately.

  • Letting the batter rest helps create tender crepes.
  • Use ripe but firm bananas so they hold their shape while cooking.
