  • 1 cup granulated sugar
  • ½ cup unsalted butter
  • ¼ cup light corn syrup
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 250°F and line a baking sheet with parchment paper.
  2. In a medium saucepan over medium heat, combine sugar, butter, corn syrup, and salt. Stir constantly until the mixture comes to a boil. Let it boil without stirring for 4–5 minutes.
  3. While the caramel is cooking, pop your kernels and place the popcorn in a large mixing bowl.
  4. Remove caramel from heat and stir in baking soda and vanilla. The mixture will foam slightly.
  5. Quickly pour the caramel over the popcorn and toss gently until evenly coated.
  6. Spread the coated popcorn onto the prepared baking sheet in an even layer.
  7. Bake for 45 minutes, stirring every 15 minutes to ensure even crisping.
  8. Remove from oven and let cool completely before breaking into pieces.
