Cajun Shrimp Sweet Potato Bites are bold, zesty appetizers where caramelized sweet potato rounds are topped with juicy Cajun-spiced shrimp and a cool lime yogurt. Salty, sweet, creamy, and a little spicy, they make the perfect party starter or light meal.

  • 2 large sweet potatoes, sliced into 1/2-inch rounds
  • 3 tablespoons olive oil, divided
  • 1 pound large shrimp (1620 count), peeled and deveined
  • 2 tablespoons Cajun seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste
  • 1/2 cup Greek yogurt or sour cream
  • 1 tablespoon fresh lime juice
  • 2 tablespoons fresh cilantro or parsley, chopped

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss sweet potato rounds with 2 tablespoons olive oil, salt, and pepper. Arrange on the baking sheet and roast 20–25 minutes until tender and caramelized, flipping once.
  3. Pat shrimp dry and toss with Cajun seasoning, garlic powder, paprika, salt, pepper, and remaining olive oil.
  4. Heat a skillet over medium-high heat and sear shrimp for 2–3 minutes per side until opaque and golden.
  5. Mix Greek yogurt with lime juice to create a tangy sauce.
  6. Top each sweet potato round with a shrimp, a dollop of yogurt sauce, and fresh herbs.
  7. Serve warm with lime wedges if desired.

  • Roast sweet potatoes until edges caramelize for extra flavor.
  • Dry shrimp well so seasoning sticks and they sear beautifully.
  • Add cayenne pepper or hot sauce for extra heat.
