Cajun Chicken & Gravy

Cajun Chicken & Gravy is a bold, flavor-packed Southern-inspired dish featuring tender, seasoned chicken smothered in a rich, spicy gravy. Perfect over mashed potatoes, rice, or biscuits for a comforting, hearty meal.

Ingredients

Scale
  • 1. 4 boneless, skinless chicken breasts
  • 2. 2 tablespoons Cajun seasoning
  • 3. 1 teaspoon salt
  • 4. 1/2 teaspoon black pepper
  • 5. 2 tablespoons olive oil
  • 6. 2 tablespoons butter
  • 7. 1 small onion, finely chopped
  • 8. 2 cloves garlic, minced
  • 9. 2 tablespoons all-purpose flour
  • 10. 2 cups chicken broth
  • 11. 1/2 cup heavy cream
  • 12. 1/2 teaspoon smoked paprika
  • 13. 1/4 teaspoon cayenne pepper (optional for extra heat)
  • 14. 2 tablespoons chopped parsley (for garnish)

Instructions

  1. Pat chicken breasts dry and season both sides with Cajun seasoning, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4–5 minutes per side until golden brown and cooked through. Remove from skillet and set aside.
  3. In the same skillet, melt butter and sauté onion until soft, about 3 minutes. Add garlic and cook for 30 seconds.
  4. Stir in flour and cook for 1 minute to create a roux.
  5. Gradually whisk in chicken broth until smooth. Add heavy cream, smoked paprika, and cayenne pepper.
  6. Simmer for 5–7 minutes until gravy thickens.
  7. Return chicken to skillet, spoon gravy over the top, and cook for 2–3 minutes to heat through.
  8. Garnish with parsley and serve hot over mashed potatoes, rice, or biscuits.

Notes

  • For extra tender chicken, pound breasts to even thickness before cooking.
  • Adjust Cajun seasoning for more or less spice.
  • Double the gravy if you like it extra saucy.
