A hearty and comforting cabbage boil made with tender cabbage wedges, creamy potatoes, sweet carrots, and smoky sausage simmered together in a savory broth. This one pot meal is simple, filling, and perfect for cozy dinners.

Ingredients

  • 1 large green cabbage, cut into thick wedges
  • 1 1/2 pounds baby potatoes, halved
  • 3 large carrots, sliced
  • 14 ounces smoked sausage, sliced into thick rounds
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 tablespoon olive oil

Instructions

  1. Place a large pot over medium heat and add olive oil.
  2. Add sliced smoked sausage and cook for 3 to 4 minutes until lightly browned. Remove and set aside.
  3. In the same pot, sauté chopped onion and minced garlic until softened and fragrant.
  4. Add baby potatoes, sliced carrots, cabbage wedges, browned sausage, dried thyme, salt, and black pepper.
  5. Pour in chicken broth and bring to a gentle boil.
  6. Reduce heat, cover, and simmer for 25 to 30 minutes until vegetables are tender.
  7. Taste and adjust seasoning if needed. Let rest for 10 minutes before serving.
  8. Ladle into bowls with broth and serve warm.
