A stunning butterfly pea color changing drink that transforms from deep blue to vibrant purple with a splash of lemon. Lightly sweet, floral, and refreshing, this natural mocktail is perfect for warm days or special gatherings.

Ingredients

  • 2 tablespoons dried butterfly pea flowers
  • 2 cups hot water
  • 2 tablespoons granulated sugar
  • 2 tablespoons fresh lemon juice
  • 1 cup ice cubes

Instructions

  1. Place the dried butterfly pea flowers into a heatproof pitcher or bowl.
  2. Pour the hot water over the flowers and let them steep for 5 to 7 minutes until the liquid turns deep blue.
  3. Strain out the flowers using a fine mesh strainer.
  4. Stir in the granulated sugar until completely dissolved.
  5. Allow the tea to cool completely.
  6. Fill clear glasses with ice cubes and pour the chilled blue tea over the ice.
  7. Slowly add the fresh lemon juice and watch the color change from blue to purple, then stir gently and serve.
