A fresh and creamy Italian-inspired pasta made with juicy burst cherry tomatoes and luscious burrata cheese. Quick, elegant, and full of flavor.

Ingredients

  • Cherry Tomatoes: 3 cups – Sweet and juicy, they burst open to create a fresh, bright sauce.
  • Burrata Cheese: 2 balls (about 4 oz each) – Adds rich creaminess and a luxurious finish.
  • Spaghetti or Linguine: 12 ounces – Long pasta catches the sauce beautifully.
  • Garlic: 4 cloves, thinly sliced – Infuses the olive oil with fragrant depth.
  • Extra Virgin Olive Oil: ¼ cup – The base for sautéing and flavoring the sauce.
  • Fresh Basil Leaves: 1 cup, torn – Brings aromatic, herbaceous notes.
  • Salt: To taste – Enhances all the natural flavors.
  • Black Pepper: To taste – Adds a gentle warmth and spice.
  • Red Pepper Flakes: ½ teaspoon (optional) – For a subtle kick of heat.
  • Pasta Water: ½ cup – Helps emulsify and bind the sauce to the pasta.

Instructions

  1. Preheat Your Equipment: Set a large skillet over medium heat and warm the olive oil until shimmering.
  2. Combine Ingredients: Add the sliced garlic and cook for 30 seconds until fragrant, then add cherry tomatoes and a pinch of salt.
  3. Prepare Your Cooking Vessel: While the tomatoes cook, bring a large pot of salted water to a boil and cook the pasta according to package instructions.
  4. Assemble the Dish: Let the tomatoes cook undisturbed for 5–7 minutes, then press them gently with a spoon to release their juices. Add red pepper flakes if using.
  5. Cook to Perfection: Drain the pasta, reserving ½ cup of water. Add pasta to the tomato skillet along with some pasta water and toss to coat.
  6. Finishing Touches: Tear in fresh basil, season with black pepper, and adjust salt if needed.
  7. Serve and Enjoy: Divide the pasta among plates, top with a ball of burrata, and drizzle with olive oil. Serve immediately while the cheese is cool and creamy.

Notes

  • Use heirloom cherry tomatoes for extra color and sweetness.
