Ingredients

Scale
  • 1 cup fresh blueberries
  • 2 tablespoons granulated sugar
  • 2 tablespoons water
  • 2 tablespoons fresh lemon juice
  • 2 cups sparkling water, chilled
  • 1 cup ice cubes
  • 4 thin lemon slices for garnish

Instructions

  1. Place a small saucepan over medium heat.
  2. Add blueberries, sugar, and water to the saucepan and stir gently.
  3. Simmer for 5 to 7 minutes until the berries burst and release their juices.
  4. Strain the mixture through a fine mesh strainer into a bowl and let the syrup cool completely.
  5. Fill two glasses evenly with ice cubes.
  6. Add 2 tablespoons of blueberry syrup and 1 tablespoon of fresh lemon juice to each glass.
  7. Slowly pour about 1 cup of chilled sparkling water into each glass and stir gently to combine.
  8. Garnish with thin lemon slices and serve immediately.

Notes

  • Use very cold sparkling water to keep the drink fizzy longer.
  • The blueberry syrup can be made up to 3 days in advance and stored in the refrigerator.
  • Adjust the sweetness by adding slightly more or less sugar to taste.
  • Frozen blueberries can be used if thawed first.
