A refreshing and lightly floral iced drink made with blueberry lavender syrup, fresh lemon juice, and sparkling water. This beautiful purple beverage is perfectly balanced, gently sweet, and ideal for warm days or special gatherings.

Ingredients

  • 1 cup fresh blueberries
  • 1/2 cup granulated sugar
  • 1 cup water, divided
  • 1 teaspoon dried culinary lavender
  • 1 tablespoon fresh lemon juice
  • 1 to 2 cups ice cubes
  • 2 cups sparkling water

Instructions

  1. In a small saucepan, combine blueberries, granulated sugar, 1/2 cup water, and dried culinary lavender.
  2. Place over medium heat and bring to a gentle simmer. Cook for 8 to 10 minutes, lightly crushing the blueberries as they soften.
  3. Remove from heat and let the mixture steep for 5 minutes.
  4. Strain the mixture through a fine mesh strainer into a bowl or jar, pressing gently to extract the syrup. Discard the solids.
  5. Stir in fresh lemon juice and the remaining 1/2 cup water. Allow the syrup to cool completely.
  6. Fill glasses with ice cubes.
  7. Pour the blueberry lavender syrup halfway up each glass.
  8. Top with sparkling water and stir gently to combine. Serve immediately.

Notes

  • Use culinary grade lavender only to ensure safe and pleasant flavor.
  • Do not over steep the lavender to avoid bitterness.
  • Adjust sweetness by adding more or less sparkling water.
  • The syrup can be stored in an airtight container in the refrigerator for up to 5 days.
