  • 1 pound cooked lobster meat, chopped
  • 4 New England–style hot dog buns
  • 1/4 cup mayonnaise
  • 1 lemon, zested and juiced
  • 2 tablespoons unsalted butter
  • 1 celery rib, finely diced
  • 1 tablespoon fresh chives, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Lettuce leaves (optional, for lining buns)

Instructions

  1. In a bowl, gently mix lobster, mayo, lemon zest, lemon juice, celery, chives, salt, and pepper. Chill for 15–30 minutes.
  2. Heat a skillet over medium. Butter buns and toast on each side until golden.
  3. Line buns with lettuce if using, then fill with chilled lobster mixture.
