A cozy and hearty beef shepherd’s pie with layers of savory ground beef, vegetables, and buttery mashed potatoes baked until golden. This family-favorite classic is perfect for weeknight dinners or meal prep.

  • 1 1/2 pounds ground beef
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 2 carrots, peeled and diced
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 2 tablespoons tomato paste
  • 3/4 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • Salt and black pepper, to taste
  • 4 large russet potatoes, peeled and quartered
  • 4 tablespoons butter
  • 1/2 cup milk or heavy cream
  • 1 egg yolk (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish and set aside.
  2. In a large skillet over medium heat, brown the ground beef. Drain any excess fat.
  3. Add onions, garlic, and carrots. Cook for about 5 minutes until softened.
  4. Stir in tomato paste, then pour in beef broth and Worcestershire sauce. Add peas and corn. Simmer until slightly thickened, about 5–7 minutes. Season with salt and pepper.
  5. Transfer the meat mixture to the greased baking dish, spreading it evenly.
  6. In a pot, boil the potatoes in salted water until fork-tender, about 15 minutes. Drain and mash with butter, milk, and salt. Optional: mix in an egg yolk.
  7. Spread mashed potatoes over the meat filling, smoothing or creating ridges with a fork.
  8. Bake uncovered for 25–30 minutes until the top is golden and slightly crispy.
  9. Let cool for 10 minutes before serving.

Notes

  • Taste the filling before layering to adjust seasoning.
  • Broil the top for 2 minutes at the end for extra crispiness.
  • Swap ground beef with lentils or turkey for a twist.
