Flavor-packed, juicy ground beef wrapped in crisp lettuce cups with crunchy vegetables and a savory-sweet sauce. A quick, low-carb meal that’s both satisfying and refreshing.

Ingredients

  • Ground Beef (80/20): 500 grams
  • Garlic (minced): 3 cloves
  • Fresh Ginger (minced): 1 tablespoon
  • Green Onions (chopped): 4
  • Carrot (finely shredded): 1 medium
  • Water Chestnuts (chopped): 1/2 cup
  • Soy Sauce: 3 tablespoons
  • Hoisin Sauce: 2 tablespoons
  • Rice Vinegar: 1 tablespoon
  • Sesame Oil: 1 teaspoon
  • Sriracha or Chili Garlic Sauce: 1 teaspoon
  • Butter or Romaine Lettuce Leaves: 12 leaves
  • Salt: to taste
  • Black Pepper: 1/2 teaspoon
  • Fresh Cilantro (optional): for garnish

Instructions

  1. Preheat Your Equipment: Heat a large skillet or wok over medium-high heat until hot.
  2. Combine Ingredients: Add sesame oil, garlic, and ginger. Sauté for 1 minute until fragrant. Add ground beef and cook, breaking it up, until browned. Drain excess fat.
  3. Prepare Your Cooking Vessel: Stir in soy sauce, hoisin sauce, rice vinegar, sriracha, salt, and pepper. Mix well and simmer for 2–3 minutes.
  4. Assemble the Dish: Add carrots, green onions, and water chestnuts. Cook for another 2 minutes, just to soften slightly.
  5. Cook to Perfection: Taste and adjust seasoning. Simmer until the mixture thickens and the liquid reduces slightly.
  6. Finishing Touches: Remove from heat. Cool slightly before serving to prevent wilting the lettuce.
  7. Serve and Enjoy: Spoon the beef mixture into lettuce leaves. Top with chopped cilantro and an extra drizzle of sauce if desired.

Notes

  • Use a salad spinner to dry lettuce leaves completely for best texture.
  • Prepare the beef mix ahead and reheat just before serving.
  • Add lime juice or chopped peanuts for extra brightness and crunch.
