  • 2 cups barley flour
  • 1½ cups bread flour
  • 1½ cups warm water
  • 2¼ teaspoons active dry yeast
  • 1½ teaspoons salt
  • 2 tablespoons olive oil
  • 1 tablespoon honey (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). If using a Dutch oven, place it inside to heat up.
  2. In a large bowl, whisk together barley flour, bread flour, salt, and yeast. Add warm water, olive oil, and honey. Mix until a sticky dough forms.
  3. Turn the dough onto a floured surface and gently shape it into a round loaf. Cover with a towel and let rise for 45–60 minutes.
  4. Carefully remove the hot Dutch oven and line it with parchment paper. Place the dough inside.
  5. Cover and bake for 30 minutes. Then uncover and bake another 10–15 minutes until golden and crusty.
  6. Transfer to a cooling rack and let rest for at least 20 minutes before slicing.

Notes

  • Use a combination of barley and bread flour for best structure.
  • For an artisan look, score the dough before baking.
  • Let the bread cool completely before slicing to maintain its texture.
