- 1 lb boneless chicken breast or beef sirloin, cut into 1-inch cubes
- 1 red bell pepper, cut into chunks
- 1 green bell pepper, cut into chunks
- 1 red onion, cut into wedges
- 1 zucchini, sliced
- 1/2 cup barbecue sauce (plus more for basting)
- 2 tablespoons olive oil
- Salt and pepper, to taste
- Wooden or metal skewers
- If using wooden skewers, soak them in water for at least 30 minutes.
- In a large bowl, combine meat, vegetables, olive oil, salt, pepper, and 1/2 cup of barbecue sauce. Toss to coat evenly.
- Thread meat and vegetables alternately onto skewers.
- Preheat grill to medium-high heat and lightly oil the grates.
- Grill skewers for 10–12 minutes, turning occasionally, and brush with additional barbecue sauce during the last few minutes.
- Remove from grill and let rest for a few minutes before serving.
