Golden baked sweet potato smash cups filled with melted cheddar cheese. Crispy on the edges, soft in the center, and perfect as a side dish or appetizer.

  • 4 small sweet potatoes, about 2 pounds total, peeled and cut into thick rounds
  • 2 tablespoons olive oil
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat the oven to 400°F and lightly grease a muffin tin.
  2. Toss the sweet potato rounds with olive oil, salt, black pepper, and garlic powder.
  3. Arrange the sweet potatoes in the muffin tin and bake for 20 minutes until tender.
  4. Press the centers gently to form cup shapes and fill each with shredded cheddar cheese.
  5. Bake for an additional 10 to 15 minutes until the cheese is melted and edges are golden.
  6. Let cool for 5 minutes before removing from the tin.
  7. Garnish with fresh parsley and serve warm.

  • Grease the muffin tin well to prevent sticking.
  • Use freshly shredded cheese for best melting results.
