A hearty and wholesome baked savory oat slice packed with grated veggies, cheese, and herbs. Perfect for breakfast, lunch, or a snack on the go.

Ingredients

  • 2 cups rolled oats
  • 1 cup grated zucchini
  • 1 cup grated carrot
  • 3 large eggs
  • 1 cup grated cheddar cheese
  • 1/2 cup milk
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon mixed herbs (dried or fresh)

Instructions

  1. Preheat oven to 180°C (350°F) and line an 8×8 inch baking dish with parchment paper.
  2. In a large mixing bowl, whisk together the eggs and milk.
  3. Add grated zucchini, carrot, cheese, herbs, salt, pepper, and baking powder. Stir well.
  4. Mix in the rolled oats and combine everything evenly.
  5. Pour the mixture into the prepared baking dish and spread out smoothly.
  6. Optionally top with extra cheese or herbs.
  7. Bake for 35–40 minutes until golden and set in the center.
  8. Let cool for 10 minutes, then slice and serve warm or at room temperature.
