These baked savory cottage cheese squares are light, protein-packed, and full of cheesy goodness with a hint of onion and optional cherry tomato topping. Perfect for breakfast, snack time, or meal prep.

  • 2 cups cottage cheese (full-fat)
  • 4 large eggs
  • 1/3 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 cup shredded cheddar or mozzarella cheese
  • 1/2 cup chopped green onions
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: halved cherry tomatoes for topping

Instructions

  1. Preheat oven to 350°F (175°C) and line or grease an 8×8 inch baking dish.
  2. In a bowl, whisk together cottage cheese and eggs until smooth.
  3. Add flour, baking powder, shredded cheese, green onions, salt, and pepper. Stir to combine.
  4. Pour mixture into prepared dish and smooth the top.
  5. Add cherry tomatoes on top if using.
  6. Bake for 35–40 minutes or until golden and set in the center.
  7. Let cool for 10 minutes before slicing into squares.

Notes

  • Drain cottage cheese slightly if it seems too watery.
  • Full-fat cottage cheese gives best flavor and texture.
  • Use parchment paper for easier cleanup and slicing.
